Back in the Kitchen for Christmas

Bill and I have been back in the kitchen working on several new tarts for our Christmas opening. (December 20th to 24th!) After trial and error and several attempts, it all begins with this buttery salted caramel.

We wanted to create a festive tart and what's more festive during the Christmas season than beloved eggnog? We would like to introduce "Holiday Cheer!" Our very own eggnog cheesecake tart drizzled with salted caramel.

"Nice 'n Naughty" is our smooth and silky chocolate tart topped with salted caramel. This decadent tart has been a self indulgent effort for quite some time as we searched for just the right chocolate/caramel combination. This tart just might become part of our summer menu!

Ugh Day!

UGH!
Bill is often asked, "What's the first thing you'll do when you shut down?" To which he usually responds, "Sleep." (chuckle, chuckle)

Well, yesterday was the day we solemnly refer to as "UGH!"

It goes something like this...

Our wood delivery arrives and we stack it. Sounds easy enough right? If you stack the wood over several days, it's not too bad. I do love the smell of wood burning (enter joke here). That's probably the safest way to stack ten chords of wood. Then there's the Ross method of "our stupidity knows no end". In other words, we stacked all ten chords in one day. In the pouring rain.

Now, Bill's not doing too bad today. He even took our pooch for a hike in the woods. (By the way, hunting season has begun, please be careful out there.) Yours truly, on the other hand, well... this is the first time I've been able to sit upright all day and I'll resume a horizontal position right after this posting (do not insert joke here).

On the bright side, Bill is making dinner tonight and who doesn't love an indoor fire (when it's on purpose)?

Bill and I are back in the kitchen prepping because we will be open weekends beginning this weekend up to and including the Thanksgiving weekend.

Our new hours are:

Saturday and Sunday 10am - 5pm

Thank You for Another Successful Summer

Every summer Bill and I open our doors with trepidation. Will you come? Will you remember us after the long winter? Will you still like what we have to offer?

This year we had more cause for apprehension. Several new competing businesses emerged all vying for the same limited customer base in the very short time we have as a seasonal business here in cottage country to earn a year's income.

We are happy to say this has been our busiest summer to date. The July and August long weekends were exceptionally busy this year and we saw a growth in our customer base and our returning customers. Simply put, in five years, this has been our most successful summer and we have you to thank for making us a part of you cottage country experiences and traditions.

It was an interesting summer. We won Rail's End Gallery's butter tart contest. We gave away five dozen tarts in our customer appreciation giveaway, and we have met some new and interesting people (both in the store and online) some of whom have left a long and lasting impression.

We have never claimed to be the best, but we will always do our best because we believe anything less just isn't good enough for our customers. But beyond the baking we hope we've made you smile, made you laugh, and above all, we hope we made you feel welcome.

What's Love Got to Do With It? (Sorry Tina)

 
In this post I would like to discuss the term "baked with love" as it relates to the baking profession. It doesn't. 

Let's face it "baked with love" is that two layered, lopsided, wax crusted, Sahara inspired monstrosity Nana made for your tenth birthday with its mirage of frosting because she didn't want to spend another seventy-nine cents (yes, I'm dating myself here) on a second can of the premade goop.

"Baked with love" is how she guilts you into choking back a second slice of that concrete crater filled, sugar saturated, gastronomical beast she calls a pie.

My Nana was not a baker! "Baked with love" meant give me a jug of milk, a chisel, and thank my lucky stars my birthday only came around once a year.

But I digress.

The fact is, it doesn't matter if it's baked with love, puppy dogs, belly rubs or rainbows; none of these things are ingredients; none of these things will make baked goods taste better.

We bake with careful attention to detail and a serious desire to stimulate your taste buds. We put our whole heart into our baking because we take great pride in our work and hope it's apparent in the quality of our baked goods.

In conclusion: sugar, flour, butter, and eggs are ingredients. "Love"
is not.
 
So, what's love got to do with it?

Professionally speaking, "baked with love" is just flaky fake suck up doo doo and we don't do that…

… anymore…

New Original Artwork by William Ross

This is Bill's latest piece. He has been wanting to try something different and this piece is definitely different from any of his other paintings so far. This untitled piece is an original abstract fantasy oil on 80X100cm canvas.
 
This painting hangs in the store and has been receiving a lot of attention this summer. Bill has received a couple of generous offers for this piece, however, he is still reluctant to part it.
 
In my humble opinion, the picture does not do this piece of artwork justice.

It's Officially Summer in Cottage Country

 
 
The sun is setting on yet another Canada Day long weekend. Summer has truly arrived here in cottage country! We want to thank everyone who included The Little Tart in their Canada Day long weekend celebrations.

We're Celebrating 5 Years With a Giveaway!!!


It has been our pride and privilege to be a part of the cottage country tradition and experience for five years. (Has it really been that long?) Many of you know we weren't always The Little Tart pastry shop. The transition was a leap of faith and it's one we have never regretted. 

We are fortunate to have customers who have been our customers since long before we became The Little Tart pastry shop.  

You who have stayed our customers and endured every change we have made along the way have become more than just our customers. 

You have become our friends. 

It is always exciting to meet and greet residents and visitors who are new to the cottage country experience. We often find ourselves tour guides, historians, and/or ambassadors. Roles we don't take lightly. We take pride in our courteous customer service because we realize how important it is to make everyone's experience a welcoming one. 

And, of course, it is always an immense compliment when our new customers become regular customers we look forward to seeing year after year. 

And so, to celebrate our 5th Anniversary as The Little Tart pastry shop we're holding a customer appreciation giveaway! Now this part took some real thought… 

We're giving away 5 dozen tarts and here's how we're going to do it… 

Every Thursday (which just happens to be the 5th day of the week), from July 4th until August 29th, our 5th customer of the day will win…

5 TARTS! 

No, that doesn't sound right. Let's make it a complete half dozen! What kind is up to you! 

That's 6 tarts to the 5th customer on the 5th day of every week from July 4th to August 29th! It's that simple! 

Wait a minute! We're a six pack short! (Wow, if we had a tart for every time we've heard that! Wait… we probably do.) 

Anyhoo… to kick things off we're going to give away our first six pack of tarts to our 5th customer on CANADA DAY MONDAY!!! 

Now, we do have to have a few rules. (All giveaways have them.) 

1. Family can not participate in our giveaway. Let's face it, you guys get enough free stuff already!

2. Everyone has one chance to win. In the spirit of fairness, should the fifth customer be a previous winner, the sixth customer will be awarded the prize. 

3. Actually the third rule isn't really a rule. How you decide to accept your tarts is up to you. You may take them right then and there OR we will give you a gift certificate for your tarts, redeemable at a later date.

The Little Tart Wins Haliburton's Best Butter Tart Contest!

Each year the Rail's End Gallery hosts Haliburton's largest yard sale called "Treasures N' Trash" and as part of the festivities they host a butter tart contest. The Rail's End contacted us on Twitter to ask us if we would be entering this year. We had never entered the butter tart contest before, but decided it would be fun and a good way to get "The Little Tart" name into the town of Haliburton. We were told to bring a dozen tarts to the contest after which the remaining tarts would be sold for charity to help support the arts in Haliburton. Sounded good to us! Unfortunately we couldn't be there when the winner was announced, but that evening one of our customers arrived to congratulate us and present us with the prize for this years win. It was a very nice surprise and we'd like to dedicate this win to our mothers.

To Anne Fortier for being a wonderful baking teacher. She taught me that baking is an art form and only the very best is good enough to serve.

To Evelyn Ross for being our loudest cheerleader. No matter how difficult or trying things get, she reminds us that everything will always be okay.

2013 Haliburton Home and Cottage Show

It's the "Haliburton Home and Cottage Show" weekend! With there being only two of us, and we just can't be in two places at once, The Little Tart will not be there, but you can bet your buttertarts (pecan tarts, luscious lemon tarts, double sized squares, and more) we're open and we're only a 10 minute drive south of main street Haliburton off Gelert Road; past the Fish Hatchery, past the Driving Range and a short scenic ride to Koshlong Lake Road. Look for our OPEN sign.

Sunday 10am - 5pm

2013 Victoria Day Long Weekend

What did one tart say to the other tarts?
Nothing, they're tarts!
 But they sure do look good together on a plate don't they?
 
It may not seem like it right now but summer is just around the corner and we know this because we have arrived at another Victoria Day Long Weekend. We are making baking!

Last summer ended abruptly for us and we're happy to say our mother's are both doing well.

It's been a bumpy start this year. Bill had to have surgery on his foot the Tuesday before our May opening and he's still on the mend as we enter our first busy weekend, but we'll be ready.

It was a very long cold, snowy winter here in the highlands but the snow has finally melted and we're seeing the signs of spring that make Haliburton such a beautiful picturesque place to live and recreate. Now we just need you to make it perfect!

We look forward to seeing our wonderful regular customers again and we're always thrilled when someone new ventures into our tiny corner of the highlands and makes us a part of their cottage country tradition!

Happy New Year

Happy New Year! Welcome to 2013. We hope everyone had a wonderful Christmas and New Year.

It is picture postcard pretty here in Haliburton right now and this past weekend the trail was very busy. It's nice to see winter tourism has finally began with the snowfall! And it has been falling!

On December 1st for the first time ever in winter we opened The Little Tart on Saturdays and Sundays. So far we're finding it was the right decision. It has given us a chance to try some new items such as: mince tarts (of course with our own filling made from scratch), traditional nanaimo bars, rice krispie squares, and this past weekend we added creamy chocolate fudge (we'll be experimenting with more flavors as the winter continues). Some of these items will carry on in to the summer. Needless to say, it has been a sweet winter so far!
