The Little Tart is Haliburton's tart store! We're a tiny pastry shop in the town of Donald, 8km south of main street Haliburton, Ontario. (That's a short drive along Gelert Road!) We offer good old fashioned home baked goodness from our very own "Ooey Gooey Butter Tarts" to our popular Thanksgiving pumpkin pies. All of our baking is created by hand, from scratch, on site. All of our recipes are tried and retried until they are our absolute best because only our very best will do.

Opening Easter Weekend!
In my eagerness to open, I had announced we will be opening Easter Weekend before I checked to see what weekend Easter fell on this year. Nonetheless, we will be opening Easter Weekend (next weekend) and if you are in or around the Haliburton Highlands we hope you'll pay us a visit!

Cross Legged and Yoga Posed
It has been a busy week. The Little Tart may be a tiny store, but there's always lots to do to prepare to open.
Every year we try to update the names of our products or create new slogans and sayings for our product cards. I know I've said it before (it's good to know before you get here) that Bill and I have a - what's the word? - bizzare? strange? weird? (All of the above.) sense of humor and we have a lot of fun coming up with some of the things we put on our product cards.... I guess you could say it's another way we get "jazzed up" (That's right, I gots the lingo because I'm hip with the kids today.) and excited about opening.
Hey, we may be middle aged, but we are immature.
Needless to say, we don't put "everything" we come up with on our product cards and I wont post examples, but we are aware that we sometimes push the limits. Here's the thing - as much as we want you to enjoy our baked goods (and we really want you to enjoy our baked goods), whether we're a part of your cottage country traditions or you just happened upon us while passing through, we want your visit to our store (which is also our home) to be a memorable experience that lasts long after the treats are gone.
Having said all that, let me add, that while we were working and creating our new product cards, and we were both trying to outdo one another, I was cross-legged and yoga posed. (I'm claiming that phrase, and trust me, if you're middle aged and menopausal - it's a thing.) Word.

What's in a Name?

Bill and I have often talked about what The Little Tart might look like and what you see is what we came up with. She's a little sweet treat "all that and a butter tart", but you wont be seeing her behind the counter (sorry fellas!).
It's always funny to see and hear a new customer's reaction when they walk into The Little Tart and find Bill behind the counter.
We're starting to look toward opening day which falls on Easter Weekend so please check back for future posts (I know I've neglected this blog a bit lately. I'll work on that.) and hours of operation.
We'll look forward to seeing you again as we kick off our 2015 season!

Recipe for Three Ingredient Gluten Free Pancakes
We don't specialize in gluten free baking, but I do like coming across recipes that are naturally gluten free; no special flour, no special ingredients. Now, I was skeptical about these gluten free pancakes, but they turned out and tasted quite good.
This recipe will make approximately eight 3 inch pancakes (any bigger and they're difficult to flip). I don't recommend doubling the recipe. They're quick to mix up so if you need more, while one batch is cooking, prepare another.

Ingredients
2 bananas
2 eggs
1/8 teaspoon baking powder

| Mash bananas until chunky. |

| Beat two eggs in a separate bowl. |

| Add baking powder and eggs to bananas and mix. |

| Pour 3 inch circles onto well greased (we used butter) hot grill or pan. |

| When the baking powder has activated (pancakes will fluff slightly) flip and let cook until golden. |

| Ta da! Top with fruit, syrup, or dust with icing sugar. It's up to you! |
